There are a ton of different things you can do with anything in theory. Mainly 1mm stones are used for accent stones but could also be part of family jewellery or if you're making a design that requires a lot of smaller stones to add sparkle but not interfere with the metal work. You can set them in a lot of different ways as well so it's not specific to just prong or channel setting.
The question is a little more towards a gemsetter, jewellery designer or goldsmith though (which I have been training with the later of those for a little while now) so I would maybe suggest you find someone in those industries to give you a better idea. We mainly deal with cutting and identifying the gemstones on this website, not what to do with them afterwards.
